Cinnamon bun cake

My eldest is crazy for cinnamon buns, but I find making them tedious. When I found a recipe for cinnamon bun cake, I knew I had a winner. I made a lot of adjustments (it didn’t have a cream cheese icing – wth?) and it was a huge hit.

Cake
3 cups flour
1/2 tsp. salt
1 cup sugar
4 tsp. baking powder
1½ cups milk
2 eggs
2 tsp. vanilla
½ cup melted butter

Topping
1 cup butter
1 cup brown sugar
2 Tbsp. flour
2 Tbsp. cinnamon

Icing
1 cup powdered sugar
2 Tbsp. milk
1/2 cup cream cheese

Combine dry ingredients in a medium bowl. In another medium bowl, combine liquid ingredients well, and mix with dry ingredients. Set aside.

Preheat oven to 350 F. Line a 9 x 13 baking pan with parchment paper, as pour in batter.

In a small bowl, combine topping ingredients and mix well. Drizzle on top of cake and swirl a knife through until the top is marbled.

Bake at 350 F for 35-45 minutes, until a toothpick inserted in the centre comes out dry.

Combine icing ingredients and spread over warm cake.

    Oh my gosh this recipe looks divine! I rarely eat cinnamon buns. They are just too filling for me. But this cake has really possibilities! Pinning!
