I think I can officially talk about fall now that back to school shopping is well under way. I love fall because my favourite cookie in the world becomes available by the case – Mint Chocolate Girl Guide cookies.
Last year I bought my usual two cases, and had about half a case left when disaster struck – our house superheated to over 40 degrees Celcius with a furnace problem, and melted the cookies together. When they cooled, they stuck together. Though they tasted the same, they looked bizarre and were hard to break apart without crumbling.
So I made lemonade, so to speak.
I threw the cookies into the food processor and pulsed them into crumbs, and hacked my Rob Ford crack bars recipe to make these Girl Guide Magic Bars.
You’re going to love them.
Girl Guide Magic Bars
1/2 cup graham crumbs
1 1/2 cups crushed mint chocolate girl guide cookies
1/2 cup melted butter
Combine first three ingredients and press into a 8 inch square pan lined with a sheet of parchment paper.
1/2 package Skor bits
1/2 package chocolate chips
1 cup chopped pecans
1 can condensed milk
Layer Skor bits, chocolate chips and pecans on base layer (pecan slices last). Pour condensed milk on top. Bake in a preheated oven at 350 F for 25 – 30 minutes, or until golden brown.
Chill in fridge until cold, then slice and serve. I usualy make four pans at a time. Once chilled, I pop the whole thing out of the pan and slide into a Ziploc bag to freeze, unsliced, until I need them. They only take about half an hour to thaw enough to slice. Enjoy!
