Microwave mug brownie

My day job is in Corporate Communications, and I like to liven things up around the office once in awhile. Once or twice a year I’ll declare a microwave mug brownie day, and bring in everything needed to make gooey chocolate brownies in the office kitchen. I pre-measure the dry ingredients into baggies the night before and bring them in with oil and tablespoons. My coworkers measure the liquids into their mug, add the dry ingredients, stir well and microwave them for one minute. Then rave about the chocolate rush all day.

Microwave mug brownie

4 tsp unsweetened cocoa powder
8 tsp granulated sugar
1 dash salt
8 tsp plain flour
1 drop vanilla extract
1 tbsp water
1 tbsp coffee
2 tbsp oil

Add water, drop of vanilla extract, oil and water and mix. And your pinch of salt and stir in all your other ingredients one by one. Make sure there are no lumps of dry ingredients.

Pop it in the microwave for 60-90 seconds (depends on strength of microwave). Remove carefully, allow to cool for a at least 30 seconds before attempting to eat.

  1. Ooh sounds like such a tasty treat! I wonder if you sub in vanilla sugar for some/all of the sugar if you could eliminate the extract? Mmm brownies…
