Red velvet whoopie pies

These red velvet whoopie pies are simple to make, and melt in your mouth delicious.

Cookies

1 box red velvet cake mix
2 eggs
1/3 cup oil
1 tsp. vanilla extract
1/2 cup powdered sugar

Cream Cheese Filling

4 oz. cream cheese, softened
1/4 cup butter, softened
1 tsp. vanilla extract
3 – 4 cups powdered sugar
Pink heart sprinkles (or any other sprinkles you like)

In a large bowl, combine cake mix, eggs, oil and vanilla extract.

Roll dough into ping pong ball size or smaller. The dough will be very gooey – try to aim for consistency in size.

Roll in icing sugar, then place cookie sheet at least 2 inches away from other dough balls.

Bake for 7-10 minutes and let cool, until crackled on top.

In a medium bowl, beat cream cheese and butter until smooth. Add vanilla and slowly add powdered sugar until you reach your desired consistency. Mix in pink heart sprinkles (or wait to roll cookie edge in sprinkles).

When cookies are cooled, spread cream cheese icing on a cookie bottom and top with another cookie.

  1. I have sent this recipe to my daughter, my husband and a number of friends in hopes somebody makes these for me. I love them, and I want to shame eat them in the dark.
